  • 2 OZ ROOIBOS TEA-INFUSED RYE WHISKEY 
  • 3/4 OZ ORANGE LIQUEUR 
  • 1/2 OZ SWEET VERMOUTH
  • 2 DASHES ORANGE BITTERS
  • ORANGE ZEST / BRANDIED CHERRY 
  • ROOIBOS TEA INFUSION
 
Directions
1. COMBINE FIRST FOUR INGREDIENTS IN A COCKTAIL SHAKER
2. ADD ICE, SHAKE VIGOROUSLY AND DOUBLE STRAIN OVER ICE
3. GARNISH WITH ORANGE ZEST AND BRANDIED CHERRY
 
FOR ROOBIOS INFUSION: ADD 2 OZ (VOLUME) LOOSE-LEAF ROOIBOS TEA PER 750 ML RYE. LET STAND FOR TWO HOURS, AND THEN STRAIN OUT TEA LEAVES.

3. SERVE ON THE ROCKS IN A DOUBLE OLD-FASHIONED/ ROCKS GLASS

1. SHAKE ALL INGREDIENTS, EXCEPT SODA, FULL OF ICE IN A SHAKER TIN
2. HARD SHAKE 8 TO 10 SECONDS
3. ADD 1.5 OZ SPLASH CLUB SODA TO TIN
4. STRAIN OVER ICE IN HIGH BALL/ COLLINS GLASS 
5. DUST WITH CINNAMON POWDER
6. GARNISH WITH DRIED PINEAPPLE

3 MUDDLED MARION BLACKBERRIES 
3/4 OZ ROSEMARY INFUSION TOP WITH SODA 
 
Directions
1. MUDDLE 3 BLACKBERRIES IN A COCKTAIL SHAKER
2. ADD REST OF INGREDIENTS EXCEPT SODA
3. ADD ICE, SHAKE, AND SERVE ON ROCKS IN COLLINS GLASS. TOP WITH SODA.
4. GARNISH WITH BLACKBERRY SKEWER AND GRATED LEMON ZEST
 
FOR ROSEMARY SYRUP: ADD 2O OZ AGAVE OR SUGAR AND 16 OZ WATER. ADD 6 SPRIGS OF ROSEMARY TO POT. BRING TO A BOIL. REMOVE FROM HEAT. COVER AND LET COOL FOR 45 MIN. STRAIN.

MALDON SEA SALT OR LOCAL SMOKED SALT FOR GARNISH
 
Directions
1. RUB HALF OF THE RIM WITH LIME 
2. DIP EDGE OF HALF GLASS IN SMOKED SALT
3. ADD ALL INGREDIENTS INTO COCKTAIL TIN
4. FILL LARGE SHAKER TIN WITH ICE
5. HARD SHAKE FOR 8 SECONDS
6. DOUBLE STRAIN OVER ICE INTO LARGE ROCKS/DOUBLE OLD FASHION GLASS
7. ADD CHARRED CHILI AGAVE
 
Char 3 to 4 Santa Fe or Anaheim chillies on open flame. Remove Seeds. Mix 16 oz light agave with 16 oz water. Add all ingredients to blender. Blend ingredients on high. Strain should have less slightly less heat than jalapeño.
