South Summer Cocktails

It’s no secret – Summer temperatures in the South can reach 90 degrees and – dare we say it? – above. When it’s this hot, a refreshing summer cocktail is a must, and we’ve gotten really good at making them. We’re giving you some of our favorite Summer cocktail recipes to share the love and liquid sunshine.

Sparkle and Pop

1. The SPARKLE & POP
If your popsicle is going to melt, it might as well melt into some sparkling wine.

Where to find it: City Lights Rooftop, Le Méridien Charlotte’s new rooftop bar and lounge – which, we should mention, has a gorgeous 360° view of the Charlotte skyline.

How to make it:
1 King of Pops popsicle, any flavor
Generous splash of Prosecco

Let popsicle melt into Prosecco and enjoy.

The Usual Suspects

2. The Usual Suspects
The ONLY thing that could possibly make an ocean view better would be this cocktail and its tropical citrus oomph.

Where to find it: W Fort Lauderdale, where they have sweeping ocean views and a 15-foot long reef aquarium full of mesmerizing jellyfish.

How to make it:
2 oz. Pyrta XO Rum
2 dashes Angosutra Bitters
1/2 oz. Velvet Falernum
3/4 oz. pineapple juice
3/4 oz. lime juice

Shake and enjoy.

Cucumber Collins

3. The Cucumber Collins
Rule of thumb: Tart + Sweet = Crisp + Refreshing.

Where to find it: W South Beach, where they recommend pairing this one with Tuna Tartare or a burger.

How to make it:
2 oz. Cucumber Vodka
1 tsp. pickled blueberries
½ oz. lemon juice
½ oz. yuzu
½ oz. simple syrup
Topped with soda water
Garnished with cucumber slices

Combine and enjoy.

 

Blue Dolphin


4. The Blue Dolphin
Blue drinks are cool, fresh, and, let’s be honest, super fun.

Where to find it: The Westin Cape Coral Resort at Marina Village, where they like to add local flair to their cocktails – in the form of locally-made rum.

How to make it:
¼ oz. white rum
¼ oz. spiced rum
¼ oz. blue curacao
Sour mix
Splash of Sprite

Combine and enjoy. 

The Irish Summer Chiller

5. The Irish Summer Chiller
This fruity refresher isn’t really all that Irish, but it is green!

Where to find it: Sheraton Orlando North Hotel, where they rimmed this drink with rainbow sprinkles and featured it at their NOH8 Photoshoot fundraising event in July. All proceeds went to Equality Florida’s Pulse Victim Fund.

How to make it:
½ oz. Wray Nephew Rum
1 oz. melon schnapps
¼ oz. agave
3 oz. orange juice
½ oz. fresh lime juice

Combine, garnish with watermelon, and enjoy.

 

Peach Drop 2

6. The Peach Drop
Peach lovers unite! Fun fact: in Atlanta, instead of dropping a ball on New Year’s Eve, they drop a giant peach.

Where to find it: Le Méridien Atlanta Perimeter. Their restaurant, Portico, was named one of the top 100 hottest restaurants in Atlanta by JEZEBEL Magazine.

How to make it:
1 ½ oz. Four Roses Single Barrel
½ oz. Peach Schnapps
½ oz. Georgia White Peach Syrup
2 Dashes Peach Bitters
1 Dash Whisky Barrel Bitters

Combine in a rocks glass with Peach Ice Sphere and stir 30 times. Enjoy.

Summer Crush

7. The Summer Crush
Cooler than your high school Summer crush, guaranteed.

Where to find it: Aloft New Orleans Downtown, which is located within minutes of the never-ending party on Bourbon Street.

How to make it:
1 oz. Nolet’s Gin
1 dash Angosutra Bitters
½ oz. lemon juice
1 oz. simple syrup

Combine, top with Shock Top Belgium White Ale and garnish with orange peel. Enjoy.

Tamar Indi

8. The Tamar Indi Cocktail
This drink is a work of art. No, really - it was created as part of The Ballantyne’s Liquid Arts Cocktail Program.

Where to find it: The Ballantyne, a Luxury Collection Hotel, Charlotte, where they make all cocktails with house-made syrups and sodas.

How to make it:
1.5 oz. Don Julio Resposado

3/4 oz. Lime Juice
1 oz. Tamarind Jalapeno Syrup*

* In a cook pot, add 12 ounces of light agave syrup, 12 ounces of water, 2 chopped jalapenos and 4 ounces of Laxmi Tamarind paste. Bring all to a simmer and whisk paste until broken up and liquefied into the syrup. Once tamarind is mixed, to steep in jalapeno flavor let stand for 20 minutes. Strain through cheesecloth and store up to two weeks 


Combine all ingredients and enjoy.
